Air Fryer Chicken Fajita Stuffed Avocados

- 1/2 bag CHEF’S CRAFT® Grilled Chicken Breast Chunks
- 1/2 green pepper, thinly sliced
- 1/2 onion, thinly sliced
- 2 tablespoon oil
- 1 tablespoon taco seasoning
- 1 tablespoon cumin
- 2 large avocados
- 1/2 cup Pepper Jack cheese, small dice
- 2 tablespoon scallions, sliced
- 1 small tomato, diced
- 1/3 cup tortilla chips, crushed
- 1/4 cup sour cream
Air fry chicken for 3 min at 300°F to thaw slightly.
In a large bowl, toss chicken, peppers and onions in olive oil, taco seasoning and cumin.
Add to air fryer basket and air fry at 375°F for 4 minutes.
Slice avocados in half and remove seed.
Peel avocados. When holding the avocado half, use a knife to score the avocado on one end. The skin should peel right off like an orange. Be sure not to squeeze the avocado.
Scoop out a little extra avocado from the pit area to make a nice round space for the filling.
Dip base of avocado half in sour cream and then in crushed tortilla chips and set aside on a cutting board.
Remove chicken mixture from air fryer and place in bowl.
Stir diced cheese into chicken mixture.
Place avocado halves, chip side down, in air fryer.
Spoon chicken mix into each avocado half.
Air fry at 350°F for 10 minutes.
Remove avocados from air fryer and serve with sides of cheese, sour cream, tomatoes and scallions.
